Ingredients
For Apple topping:
  • 2 Applesdices small
  • 1tsp Cinnamon. Powder (try using a freshly ground for better results)
  • xbctsp All spice. powder
For Cake:
Instructions
  1. Preparation: Preheat the oven @180 degree Celsius. And grease a Bundt cake pan.
  2. Coat the nuts with 1 tsp. flour to avoid sinking at the bottom. You may also add 2-3 tbsp. raisins if you wish.
  3. How to prepare the batter: In a bowl, sieve together flour, baking powder and keep aside. In another bowl, beat the eggs till fluffy. Add the vanilla essence, butter, orange juice and sugar and beat well till the mixture is well blended and a bit light. This will not take more then 5-6 minutes. In another platter cut the walnuts and almonds into small bits and coat with 1 tsp. flour mix and keep aside. In a small pan, remove skin and dice 2 apples and coat with cinnamon and all spice powder and keep aside. Also separately, crush 2-3 medium apples into a chunky mix and keep aside.
  4. Preparing the Cake Batter: Now, mix the wet and dry ingredients together and mix lightly with a silicon spatula. Now, add the nuts and mix again. Mix gently till well incorporated. Add the apricots / raisins.
  5. Baking the Cake: Line a layer of diced spiced apples at the bottom of the pan. Now, pour the batter over it. The batter will be thick and not of pouring consistency .So put in batches with a spatula and spread evenly through the Bundt pan.
  6. Baking : Bake the Cake @180 degrees for 55-60 minutes according to your oven. Put a skewer to check if done.
  7. Serve : Once completely cool ,unmold and serve warmed with vanilla ice-cream or caramel sauce.
