  1. Line or grease a 8” spring form pan Preheat the oven @ 165 degrees Celsius. Bake time: 50 minutes
  2. Separate the egg yolks and egg white.
  3. Beat the egg whites till stiff peaks
  4. Mix together: egg yolks, baking powder, baking soda, pear pulp, vanilla essence.
  5. In a mixer attachment grind together: sugar, salted and roasted almonds and walnuts.
  6. Add this to the egg yolk mixture and mix well.
  7. Now, sieve the 1 cup whole wheat flour and then gently fold in the flour in the egg yolk mixture.
  8. In the end- Gently and gradually fold in the egg whites , 1 scoop at a time, without deflating the air in it.
  9. Pour the mixture in the cake pan and sprinkle the white chocolate chips over it. Bake for 55 minutes @ 165 degrees Celsius.
  10. Serve hot with cream fraiche or whipped cream or any ice cream of your choice.
