Heat oil in a pan. Add dry red chilies. and Mustard seeds. Let them splutter then add onions. Cook till translucent.
Add potatoes. Mix well. Cover and cook till the potatoes are cooked. Add a little water in case the masala sticking to the pan. Add carrots and beans. Cover again for 2-3 min and cook until soft.
Add salt, turmeric/haldi and red chili powder. I used Kashmiri red chili powder.
Add poha and mix well. If the Poha has dried a bit as was on the shelf for a little while, sprinkle some water on top and mix again. Cover and cook for 2 minutes. Open lid, add peanuts and mix.Add lemon juice and shut the flame. Mix well.
Add freshly grated coconut or desiccated coconut and mix. Serve hot garnished with some coriander leaves.
