  1. Heat oil in pan
  2. add onions and cook till golden brown. Add garlic, carrots and whites of spring onions and cook until soft.
  3. Add capsicum and saute for 2-3 min. Add spices and red chili sauce. Cook until well incorporated. Add soy sauce and jaggery powder(optional).
  4. Add the greens of spring onions . Mix well and switch off the flame. Add vinegar and mix.
  5. Serve in two bowls and top it with two half fried (sunny side up) eggs seasoned with salt and chili flakes.
