Pasta -Boil
  1. In a deep pan. Boil water .add salt and oil. Bring to boil and add pasta. Cook till done and read al dante stage and drain water. ( Keep aside 1/2 cup pasta water for later use). Heat oil in a pan, saute carrots, beans, and zucchini, and keep aside. This will be added in the end.
Masala Pasta
  1. In the same kadhai/wok, add garlic to the oil and saute for 2-3 seconds and then add potatoes. On high flame, cook till almost soft. Add onions and beans (i added these later, so you may saute all in the previous step only). Cook till beans soft. Add tomatoes, and all 3 capsicums and saute for 3-4 min or till soft.
  2. Add all the spices and tomato puree and ketchup. Saute for another 5 min. Add the herbs, and pasta water we had saved. Mix well. Add the pasta and mix well. Pasta is ready.
  3. You may garnish with fresh oregano leaves or coriander leaves if you like.
