Recipe Lamington Truffles

Sometimes, you need a quick to make easy to serve desserts .Christmas is a week-long celebration time. Lots of gifts and guests are on your list. How about a super quick dessert recipe which is loved both by kids and adults. These lamington truffles are an ideal recipe for those who are always short of time and wish to cook something quick and rich at the same time. Make these truffles and you’ll just keep making them often. There is no planning needed, simplest of ingredients needed and time …..Whoshhhhh prepared in minutes. These truffles need a cake which you can bake in the microwave in a big cup or bowl in minutes. While the cake is in the micro prepare the genache and voila just mix all together and you’re ready. This being a winter season, the temperatures are low, so I didn’t need to refrigerate and it was a quick serve. In summers this may need a few minutes of refrigeration and you have wonderful, soft gooey truffles on the plate.

Ingredients

For the Cake
4 tbsp flour
2 tbsp cocoa
4 tbsp sugar
1/4 tsp th Baking Soda
2 tbsp chocolate chips dark
2 tbsp melted butter
3 tbsp milk
¼ tsp vanilla
For Genache
1/4 cup th cream
2 – 3 tbsp. butter melted
3 – 4 tbsp. chocolate chips
1/4 tsp. vanilla essence ( or essence of your choice)
3 tbsp icing sugar
To coat
1/4 cup th desiccated coconut or fresh grated coconut
Sprinklers of your choice

Steps

  1. For Cake in Microwave: mix all the ingredients in a bowl (glass) and microwave for 2 minutes.
  2. Let it cool and crumble the cake with a spoon in the same bowl.
  3. Add the genache and mix well.
  4. How to make Truffles: Now, make small balls taking small portions between your palms. The mixture will be very buttery and soft so don’t worry the top cost will manage the stickiness.
  5. Coat the balls in coconut and keep in the serving tray. Add some sprinklers of your choice.
  6. Serve or pack for gifting.
Notes

 

Note: You may make different types of truffles with the same cake recipe with little change with the genache.[br]For Plain Chocolate Truffles: Make double the quantity of genache and put in half in the crumbled cake and the rest save for coating the tuffles.Make balls and dip them /coat them in the genache and refrigerate for 15 minutes. Top them with piped white chocolate or piped genache in preferred design.[br]For Rose Truffles: Put rose essen
ce in genache and make truffles as mentioned above. Top them with dry rose petals.[br]For Nutty Truffles: Make truffles and just top them with crushed nuts (walnut and almond).[br]Play around with the flavors and enjoy the yummy and super quick truffles.
