Instructions
  1. Take rajgira/ Amaranth flour. Mix boiled potatoes, salt, black pepper powder, and mix well. Add a bit of water a little at a time and knead a soft dough. Don’t overwater. It’s a gluten-free flour and potato help to bind it.
  2. Take a sheet of parchment paper or butter paper and keep a ball of this flour on one half of it. Cover the top with the remaining portion of the sheet. Press the center with your palm to flatten it a bit. Then roll a roti with a rolling pin. Roll with a soft hand as it might break.
  3. Peel off the paper from the top. Remove the rolled roti from it. Add a grease the roti on one side and put it on the hot griddle/Tawa. Put the greased side down. Grease the top with ghee too. Cook till done on both sides.
  4. Serve hot with your favourite gravy dish or Chutney.
