Take baby potatoes, wash them properly. Peel them and keep them aside
Take a pressure cooker to pour 3-4 cups of water inside it. Put a steamer section inside and place the peeled potatoes over it. Cook till 1 whistle on full flame and simmer and cook till 2 more whistles.
Take them out and cool a bit. Then press each potato softly with your palm. Just a little.
Frying the potatoes:
Make a slurry with 3 tbsp maida +2 tbsp cornflour or 2 tbsp arrowroot powder +salt +white pepper powder. Heat oil to deep fry.
Dip each pressed potato into the slurry, remove the extra drippings around it, and put them to fry. Fry all the potatoes until golden brown. Keep aside
Cajun Spice:
Mix together all the ingredients under the cajun spice mix above. Keep aside.
Cajun Sauce:
Mix together -> Mayonnaise + cajun spice +red chili sauce + tomato ketchup. Add a little milk to adjust consistency. It should be a thick mixture and not flowy.
Assemble the Cajun Potatoes:
Place the fried potatoes on a serving dish. Pour the cajun spiced sauce over each potato. Cover them nicely.
Garnish: Garnish with Bhuna Jeera / Cumin powder, Red chili powder/ paprika, and coriander leaves, and chopped onions.
