Apples Apples everywhere!!

Come winters and the festive season and my house gets filled with apples. No !not because we love eating them, but because they are in season and whosoever comes and pays a visit surely has a bag full of apples with them. So, post all the festivities are over, what is my fridge stocked with is a pound and more of Apples. Well some the kids can have just like that .But, the one thing that makes Apples disappear like magic is of course an Apple cake. I have tried different versions in the past but this was a test and try with two of my favorites and nuts and cinnamon and all spice which again has a Christmas feel attached to it. So, here I was today afternoon preparing my next healthy cake as it goes into my kid’s tiffin as well. How i love to disguise the goodness into taste!This is an Apple Cake with a healthy, no very healthy twist. You can call it a Super Man Cake as well, as it has the health from apples, hint of citrus (vit c) ,wholesomeness of Nuts ( Almonds and Walnuts) and the goodness of Whole-wheat Flour cinnamon and all spice too play a very important role in winters, and of course you all must know about that. My kids love it so did my friends. So, here am I posting for all of you, my BEST Apple Cake . I call it Apple almonds and Orange walnut Cake with the goodness of wholewheat.Here’s how you can make this lovely and healthy recipe.

Preparation: Preheat the oven @180 degree Celsius. And grease a Bundt cake pan.Coat the nuts with 1 tsp. flour to avoid sinking at the bottom. You may also add 2-3 tbsp. raisins if you wish.

How to prepare the batter: In a bowl, sieve together flour, baking powder and keep aside. In another bowl, beat the eggs till fluffy. Add the vanilla essence, butter, orange juice and sugar and beat well till the mixture is well blended and a bit light. This will not take more then 5-6 minutes. In another platter cut the walnuts and almonds into small bits and coat with 1 tsp. flour mix and keep aside. In a small pan, remove skin and dice 2 apples and coat with cinnamon and all spice powder and keep aside. Also separately, crush 2-3 medium apples into a chunky mix and keep aside.

Preparing the Cake Batter: Now, mix the wet and dry ingredients together and mix lightly with a silicon spatula. Now, add the nuts and mix again. Mix gently till well incorporated. Add the apricots / raisins.Add the crushed chunky apple mix.

Baking the Cake: Line a layer of diced spiced apples at the bottom of the pan. Now, pour the batter over it. The batter will be thick and not of pouring consistency .So put in batches with a spatula and spread evenly through the Bundt pan.

Baking : Bake the Cake @180 degrees for 55-60 minutes according to your oven. Put a skewer to check if done.

Serve : Once completely cool ,unmold and serve warmed with vanilla ice-cream or caramel sauce.

Ingredients
For Apple topping:
  • 2 Apples dices small
  • 1 tsp Cinnamon . Powder (try using a freshly ground for better results)
  • xbc tsp All spice . powder
For Cake:
  • 3 apples medium crushed in processer (a bit chunky)
  • 2 3/4 Cup Whole-wheat Flour th
  • 1 cup Salted Butter melted
  • 2 1/3 cup Brown Sugar
  • xbd cup Orange Juice
  • 2 tsp Vanilla essence .
  • 4 eggs medium sized
  • 2 - 3 tbsp Apricots . candied (optional)
  • 1/3 Cup walnuts rd (cut into small)
  • 1/4 Cup Salted Almonds th and roasted (cut into small)
