Pilaf –Kali Mirch

A simple pilaf recipe. Beautiful basmati rice infused with the flavors of star anise and cinnamon. Cooked in clarified butter/ghee which makes it rich and healthy along with enhancing the flavors many folds. This rice is cooked with only salt and black pepper, which keeps it simple to digest and light on your stomach. But at the same time, the combination of black pepper, ghee, and the whole spice with some green cardamom makes the rice soft and scented with a beautiful aroma, which directly reaches your soul. Adding a bit of protein with soft paneer/cottage cheese makes it more appealing and appetizing.

Pilaf Kali Mirch/ Black Pepper Rice

  1. Soak the rice xbd hour before cooking.
  2. Now, heat ghee in a deep pan. Once itu2019s warm, ad all the whole spices and cumin seeds/Jeera.
  3. Once Jeera splutters, add chopped onions .cook till slightly brown. Add green peas and potatoes and cook for 5 minutes on medium high flame.
  4. Now add 2 cups of water and bring to boil
  5. Add salt and pepper powder.
  6. Add the rice and bring to one boil on high flame.
  7. As soon as the rice starts to boil, simmer the flame and cover the rice and cook until done.
  8. Meanwhile, take the paneer cubes and season with some salt and pepper/red chilli. Shallow fry these on high flame till golden brown.
  9. In another pan, fry the sliced onions till golden brown and keep aside.
  10. Once the rice cooks, garnish the rice with paneer cubes and fried onions and serve hot with your favorite curry or Raita.
