Pilaf –Kali Mirch
A simple pilaf recipe. Beautiful basmati rice infused with the flavors of star anise and cinnamon. Cooked in clarified butter/ghee which makes it rich and healthy along with enhancing the flavors many folds. This rice is cooked with only salt and black pepper, which keeps it simple to digest and light on your stomach. But at the same time, the combination of black pepper, ghee, and the whole spice with some green cardamom makes the rice soft and scented with a beautiful aroma, which directly reaches your soul. Adding a bit of protein with soft paneer/cottage cheese makes it more appealing and appetizing.

I love the exotic combination of spices. It certainly gives the rice a special touch. We enjoy peppery recipes and I’m making grilled chicken and the pilaf would really compliment the spices I’m using with our meat. Thank you.
