Mushroom and Baby corn Poha/Flattened Rice

Poha or popularly know as Flattened rice is popular dish in the North of India. Breakfast for some and evening snack for others.A perfect company for Tea and for few it takes new avatars as a party snack.I have tried many recipes with this wonder ingredient and you may like my Poha Broccoli Idli which has got crazy views on my blog here: Poha Broccoli Idli. I keep trying out recipes for my little ones.My Daughter just started school and she needs a healthy snack for Tiffin .She loves Poha,but i wanted to make it healthier and more nutritious for her. Made this very healthy and colorful Mushroom,baby corn and capsicum Poha for her and she loved it. If you are making it for your kids then you may omit the green chilies and keep the rest as per the recipe.

Mushrooms and Babycorns Poha/ Flattened Rice

  1. Soak the poha into a bowl fillied with water for 2-3 minutes. Dont soak beyond that otherwise itll become soggy and will not cook nicely.
  2. In a pan heat oil,add mustard seeds.Let then splutter and add onions.Let the onions get translucent and then add the baby corn and mushrooms,curry leaves.
  3. Add the green peas.Saute the vegetables on medium high flame for about 5 minutes or untill light brown in colour.
  4. Cover the vegetables on simmer for 2-3 minutes untill cooked.
  5. Now,add the poha and the spices.Mix well.
  6. Cover again for 2 minutes untill eveything is well combined.
  7. Switch off the flame and add the juice of half a lemon.
  8. Serve hot.
