Ash Gourd Coconut Chutney | Winter Melon Chutney is delicious, nutritious, light on your gut improves digestion, more flavorful than normal coconut chutney, and cool to eat in summer. Why Ash gourd Coconut Chutney

Ash gourd is an extremely healthy vegetable. Also known as Chinese Melon, Winter melon, white pumpkin. Its mild taste matches the flavors of cucumber. Comprising of 95 percent water, it’s very low in calories and rich in fiber.

#Nutritional Value: Per 100 gms.

Calories: 13

Protein: > 1 gram.

Fiber: 3 grams.

Carbohydrate :3 gms.

It has a high amount of Anti-oxidants. Besides these numerous benefits, it is good for digestion and reduces Blood sugar levels. Ash gourd is considered to have medicinal properties. Ash gourd juice is another popular recipe. It has anti-cancerous properties. It prevents ulcers, reduces inflammation, and has antimicrobial properties.

Ingredients
Ash gourd Coconut Chutney
  • 1 cup desiccated coconut
  • 200 gms Ash gourd
  • 1 tsp salt or to taste
  • 1 tsp black pepper powder
  • 2 tbsp curd / dahi
  • 1/4 cup roasted peanuts or pan fried peanuts
For Tempering
  • 1 tsp big mustard seeds
  • 1 tsp coconut oil
  • 4-5 Kadi patta /curry leaves
  • 2 Dry red chilies
Servings: ppl
Instructions
  1. In a mixer jar, put peeled and cubed pieces of ash gourd. Ground to puree.
  2. Now, into this, add dahi, desiccated coconut, salt, pepper, peanuts. Ground this to a fine paste. Add a little water (4-5 tbsp) for consistency. Pour this into the serving bowl.
  3. For Tempering: Heat coconut oil in a tadka pan, add mustard seeds. Let them splutter. Add kadi Patta and dry red chilies.
  4. Pour this onto the coconut chutney. Serve like this or cool in the refrigerator a bit before serving.
