Indian Masala Pasta | Pasta- Indian Masala | Indo-Italian Pasta Recipe | Vegan.  A step-by-step picture recipe. An easy, quick, mildly spiced pasta recipe -Indian style. Indian Masala Pasta recipe is easy to cook, loaded with seasonal veggies, and flavored with Indian spices and Italian herbs. A perfect fusion of Indo-Italian flavors.

 

How to make Indian Masala Pasta?

  1. Take seasonal vegetables. I took: Polo beans (Lobhia ki phali), Carrot, Zucchini, Potato, Onion, Red Capsicum, Yellow Capsicum, Green Capsicum, Tomato.
  2. Garlic paste / grated.
  3. Boil the pasta- al dante. Keep aside.

Method: Heat oil in a deep pan. Add beans, carrot and cook till soft. Add zucchini and cook till soft. Take out and keep aside. We will add this at the end. Add garlic. Saute for few seconds. Add potato (cubed) and cook till potatoes are 90 %done and add onions and cook until golden brown. Now add all 3 color capsicums and tomatoes. Cook till a bit soft. Don’t overcook the veggies, as they lose their body and texture. Now, add all the spices. Mix well. Add 1 tbsp tomato puree and 1 tbsp tomato ketchup. Mix well.

Now add the boiled pasta and carrots, zucchini, and beans. Add herbs: Mixed herbs, Chili flakes, and Oregano.

Instructions

Pasta -Boil
  1. In a deep pan. Boil water .add salt and oil. Bring to boil and add pasta. Cook till done and read al dante stage and drain water. ( Keep aside 1/2 cup pasta water for later use). Heat oil in a pan, saute carrots, beans, and zucchini, and keep aside. This will be added in the end.
Masala Pasta
  1. In the same kadhai/wok, add garlic to the oil and saute for 2-3 seconds and then add potatoes. On high flame, cook till almost soft. Add onions and beans (i added these later, so you may saute all in the previous step only). Cook till beans soft. Add tomatoes, and all 3 capsicums and saute for 3-4 min or till soft.
  2. Add all the spices and tomato puree and ketchup. Saute for another 5 min. Add the herbs, and pasta water we had saved. Mix well. Add the pasta and mix well. Pasta is ready.
  3. You may garnish with fresh oregano leaves or coriander leaves if you like.
