What is Cajun Spice?
Cajun spice is a rustic seasoning that has its origin in Louisiana. Originally, it was made by blending paprika, cayenne, garlic powder, pepper, and oregano. But then, with each new dish, it got its own new version. This Cajun spice mix used in Barbeque nation is a blend of Mayonnaise + chili flakes + Pizza seasoning (Keya) +garlic powder + onion powder + salt + Kashmiri red chili powder.

How to Make these Barbeque Nation special- Cajun Potatoes?
It’s best to serve these fresh. Do not keep them in the refrigerator as they’ll lose their texture. Homemade mayonnaise + red chili sauce +tomato ketchup + cajun spice.
Homemade mayonnaise gives a better flavor and creamier texture. It is also easy to make. It just takes 5 minutes to make it. Add a bit of milk to the cajun sauce for consistency. It’s ready!
Step 1: Take baby potatoes, wash them properly. Peel them and keep them aside.
Step 2: Take a pressure cooker to pour 3-4 cups of water inside it. Put a steamer section inside and place the peeled potatoes over it. Cook till 1 whistle on full flame and simmer and cook till 2 more whistles.
Step 3: Take them out and cool a bit. Then press each potato softly with your palm. Just a little.
Step 4: Make a slurry with 3 tbsp maida +2 tbsp cornflour or 2 tbsp arrowroot powder +salt +white pepper powder. Heat oil to deep fry.
Step 5: Dip each pressed potato into the slurry, remove the extra drippings around it, and put them to fry. Fry all the potatoes until golden brown. Keep aside.
Step 6: Make the Cajun Sauce: Mayonnaise + cajun spice +red chili sauce + tomato ketchup.
Step 7: Place the fried potatoes on a serving dish. Pour the cajun spiced sauce over each potato. Cover them nicely.
Step8: Garnish: Garnish with Bhuna Jeera / Cumin powder, Red chili powder/ paprika, and coriander leaves.

- 16 Baby potatotes Boiled and peeled (process above in post)
- 3 tbsp maida Al-purpose flour
- 2 tbsp Cornflour / Arrowroot powder
- 1 tsp salt
- 1/2 tsp white pepper powder
- 1 cup mayonnaise
- 2 tsp dried red chili
- 2 tbsp Tomato ketchup
- 2 tbsp Cajun Spice mix or adjust to taste
- 1-2 tbsp milk for consistency
- 1 tbsp chili flakes
- 1 tsp Garlic powder
- 1 tsp onion powder
- 1 tbsp Pizza seasoning/ Oregano Keya seasoning
- 1 tsp salt
- 1 tbsp Kashmiri red chili powder or paprika or cayenne pepper
- 1 tsp cumin powder/ bhuna jeera
- 2 tbsp Chopped onions
- 1 tsp Kashmiri red chili powder
- Take baby potatoes, wash them properly. Peel them and keep them aside

- Mix together -> Mayonnaise + cajun spice +red chili sauce + tomato ketchup. Add a little milk to adjust consistency. It should be a thick mixture and not flowy.
- Place the fried potatoes on a serving dish. Pour the cajun spiced sauce over each potato. Cover them nicely.
- Garnish: Garnish with Bhuna Jeera / Cumin powder, Red chili powder/ paprika, and coriander leaves, and chopped onions.
