Kothimbir Vadi | Kothimbir Cutlets | Gluten-Free Snack | Vegan Recipe. A step-by-step picture recipe. A healthy, Gluten-free, Vegan snack made with Gram Flour and Coriander leaves. It’s a steamed snack.

Kothimbir Vadi | Kothimbir Cutlets are a perfect tea-time snack. Good for Brunch too. It’s a very popular Maharashtrian snack. ‘Kothimbir’ means coriander in Marathi. Made with Gram flour mixed with spices and seeds, coriander leaves, ginger-garlic paste, green chili paste, lemon juice, peanuts, hing, and raising agent. Sugar added to perfectly balance the flavors. Steamed and pan-seared to get the perfect flavor of this simple dish with amazing flavors.

How to Make Kothimbir Vadi / Cutlets:

  1. In a bowl, take Besan. Add Kothimbir / Coriander leaves to it.
  2. Add all the spices, ginger-garlic-green chili paste, crushed peanuts.
  3. Add 1/2 tsp soda-bi-carb.
  4. Add sugar. Mix well.
  5. Add water and make a batter. The batter should not be too flowy.
  6.  Put insides a prepared steamer and cook until done. Check by inserting a knife in the middle of the cake. If it comes out clean, it’s done. Take it out of the steamer and rest on a rack.
  7. Let it cool down a bit. Cut pieces into a desirable shape. (Circles, rectangles, square or diamond)

Tempering:

  1. Heat oil, add mustard seeds ( i like mustard seeds flavor better if you wish you can replace it with jeera seeds).
  2. Add hing and now start putting Kothimbir Vadi steamed cakes to pan-sear. Cook on both sides till golden brown.
  3. Serve hot with Green Coriander Chutney or Sweet Tamarind sauce.    My personal favorite chutney is Sweet Chili Sauce. 

Garnish with coriander leaves and coconut powder and serve with green chili pickle.

Instructions

  1. In a bowl, mix together- Gram flour, coriander leaves, spices, and sugar. Also, add soda bicarb.
  2. Add ground peanuts,ginger-garlic-green chili paste. Add lemon juice, and water (1 cup gradually). Mix well and make a semi-flowy batter. Similar to dhokla batter.
  3. Grease a pan. Pour the batter into it. Steam in a kadhai/steamer for 20-25 min or until done. Insert a knife in the centre, and test. If it comes out clean it's done. Bring it out and keep on a rack to cool down.
  4. Unmould on a plate. Take a round cookie cutter or any other shape cutter. Or cut pieces with a knife. Make desired shapes. In the pan, heat oil, add mustard seeds, hing, and curry leaves. Fry these kothimbari pieces till golden brown on both sides.
  5. Serve hot with Chutney of your choice. Garnish with coconut powder or fresh grated coconut and coriander leaves. PS: recipe of Green Coriander chutney and Sweet tamarind chutney link in the Post above.
