Pindi Chole |Pindi Chana Masala is an easy-to-make recipe. It goes well with Rice, Chapati, Bhature, Poori, Luchi flatbread, Tandoori roti, and Naan flatbread.

How To Make No-Onion No Garlic Pindi Chana

Heat oil/ ghee in a pan. Add tej patta, jeera, and grated ginger/ginger paste. Saute, until the ginger is golden in colour. Add the chana masala. Now, add a little water to avoid burning. Add Kasoori methi. Pour this into the boiled chana. Bring the chana to boil. Cook until thick.

Pindi Chole

Preparing the Chole
  1. Soak the chana overnight
  2. In the morning add all the ingredients to the preparation section. Make a muslin cloth potli/tea strainer and put the same while boiling.
  3. Add all these to a pressure cooker and put to a boil. Cook till one whistle on full and then 15 minutes on simmer.
Prepare the Tempering
  1. In pan heat ghee.
  2. Add jeera, tej patta, and add ground onions and cook till light brown.
  3. Now, add the chana masala and kasoori methi.
  4. Stir for 2 minutes till the onions leave oil.
  5. Add tomato paste( grind the tomatoes and ginger together). Add a pinch of salt for better cooking.
  6. When the oil separates add a bit of water and then add this gravy to the boiled chole. Mix well. Bring to one boil.
  7. Garnish with chopped coriander and sliced onions.
  8. Serve with Roti, bhature, poori, Naan, or Rice. Goe very well with Lucchi. Serve with onion and cucumber salad and mango pickle.
