What is Suran | Jhimikand |Yam Kebab ?

You can make it more colorful is you like by adding different veggies like cabbage, broccoli, carrots, or Zucchini to it. Some people like to add boiled chana dal too to enhance the flavors. Its flavors match that of a Meat /Mutton Kebab.

Easy home-made tortillas made fresh with whole-wheat flour are a perfect combination with these delicious Yam Kebabs. Smeared with delicious sauces :coriander mint chutney, tomato ketchup, mustard sauce and mayonnaise. Filled with onion and tomato slices. A perfect Lunch or Dinner Option.
How to make perfect Yam Kebabs?
Follow a simple 3 step process.
- Steam the Yam. Jhimikand- This takes around 10-12 minutes. While the yam is steaming, ready the other ingredients. This saves time. Once the yam is steamed (check by inserting a knife) grate it.
- Make the mixture. In a bowl mix all the ingredients. Make desired shape Kebabs.
- Frying: Shallow fry the Kebabs in cooking oil on medium-high heat.
Pro-Tips for perfect Kebabs
- Instead of Boiling, steam the Kebabs. This takes almost the same time, but the yam has lesser moisture and hence the the Kebabs come out crispy and have a better flavor. Also they cook faster.
- Add Rice flour or roasted Gram Flour / Besan for better texture. They help in binding and make the Kebabs crispy.
- If you like spicy, add green chili paste along in the mixture.

- 200 gms Boiled potatoes mashed /grated
- 250 gms Yam / Suran / Jhimikand Steamed | Grated
- 1 whole wheat bread slices fresh crumbs (crush in mixer)
- 2 tbsp rice flour
- 1 tbsp grated ginger
- 1 tsp salt
- 1 tsp kashmiri chili powder
- 1 tbsp coriander powder/ Dhania Powder
- 1 tsp garam masala five spice powder
- 1 tsp dry mango powder / amchoor powder
- 1 tsp Roasted cumin powder /Bhuna Jeera
- 1 tbsp lemon juice
- 3-4 tbsp Oil shallow fry
- 1 tbsp sugar
- Steam the Yam. Boil potatoes and keep them aside. In a bowl, add grated ginger.
- Add rice flour and salt.
- Add dhania powder, red chili powder, amchoor, garam masala.
- Add bhuna jeera powder and lemon juice. Add sugar. Mix everything well.
- Make it thick like a soft dough. Make cutlets / Kebabs. Shallow fry in a pan with 2 tbsp oil.
- Serve hot with Green chutney or Make a tortilla roll with mayonnaise, green mint coriander chutney, tomato ketchup, mustard sauce, onion slices, tomato slices, and salt and pepper.
